Mmmmm What's cookin Monday!!
On the Menu today is:
Chicken with Mango Salsa
Super Good and very easy!
Ingredients:
Serves 4
For the chicken:
4 Chicken breasts, butterflied into half
3 tablespoon Olive oil
1 cup Flour, for dredging
2 Eggs, for wash
Salt and pepper to taste
Mango Salsa:
1 mango, peeled and diced
1/2 cup peeled, diced cucumber
1 tablespoon finely chopped jalapeno
1/3 cup diced red onion
1 tablespoon lime juice
1/3 cup roughly chopped cilantro leaves
Salt and pepper to taste
For Pasta:
16 oz Spaghetti pasta, cooked al dente rinsed in cold water and drained
3 tablespoons Cream cheese
1/4 cup Half n Half
1/2 tablespoon chopped Parsley
How to's:
Cook drain and set pasta aside.
Chicken and Mango salsa:
In a large skillet heat Olive oil on medium. Take each butterflied chicken breast salt and pepper then dip in egg covering completely, then dredge in flour. Shaking off excess then put into the hot skillet. Repeat till all the chicken is in. Cook on each side 2-4 minutes depending on thickness of chicken. Remove to plate.
Pour in Mango Salsa and heat till just bubbling then add back in prepared chicken.
Cook for another 3-4 minutes to combine.
Pasta:
In a Medium pot heat all ingredients and toss in pasta and then parsley.
Serve under Chicken and Salsa.
