What's cookin' Wednesday!!

The day has changed!! Wednesday is the new What's cookin!
Monte Cristo Sandwich
Yummy, Good, Easy
Ingredients:


8 slices bread (I use challah)
4 teaspoons honey dijon mustard
8 slices thin deli sliced swiss cheese
8 slices thin deli ham
8 slices thin deli sliced turkey (I like smoked)
3 large eggs
2 tablespoons flour
1 tablespoon melted butter
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons milk (low fat to try to keep it low in fat!)
powdered sugar, for dusting
raspberry preserves, for dipping

How To's:

1. Heat oven to 425°F.

2. Lightly butter a baking sheet pan. I use the spray.

3. Spread 1/2 teaspoon mustard on each slice of bread.

4. Layer between mustard sides of two slices of bread, 1 slice cheese, 2 slices ham, 2 slices turkey, and another slice of cheese.

5. Repeat to make four sandwiches. Whisk eggs, flour, butter, salt and pepper in a shallow dish until smooth.

6. Blend in milk.

7. DIP both sides of sandwiches into egg mixture until bread is lightly soaked.

8. Place on baking sheet; drizzle any remaining egg mixture over top of sandwiches.

9. Bake 8-10 minutes until bottom is golden brown.

10. Turn with wide spatula and continue baking 8-10 minutes or until second side is golden brown.

11. Serve warm dusted with powdered sugar and dip or spread raspberry preserves on sandwiches.

Mmmmm... Yuuuu- mmmmmy!!

What To Do?

Today is Monday. Usually I’d be writing a post of What’s cookin Monday but that‘s been moved to What’s cookin Wednesday. Today I have a huge Laundry list of To Do’s


I need To Do ....laundry… dishes…. Clean the kids and our room…. Go through clothes and take out un used sizes….

But there is just one issue.

I don’t Want to. I am afraid I have been Taken with the Lazies today.

Today I feel like doing NOTHING.

I should clean but I just can’t get started today.

Coffee??

Update on the Crazies

It's been a whirlwind lately!! My kids are growing so fast! He's an update of what my brood is up to!

Johnpaul:
He is now 4 years 2 months and 22 days old. He is really into his role as the Biggest Big Brother. He loves it that "baby Christian and Butter (Nate) love to follow him every where and do what he does. Christian is completely fascinated with Johnpaul. He is a big helper, he loves to please me showing how good of a helper he is. I am endlessly proud of him. He also has learned that he does have sanitary from the little ones and has begun to go into his room where his movies and most favorite toys live. He shuts the door puts on a movie and plays. Wow.. I measured him the other day and he is now 42" tall! We are going to the Great Wolf Lodge July 11th so this means he can ride almost all the slides there! He is counting the days down and every time we get into the van the question is asked... "Are we going to the Great Wolf Lodge now Mommy??" Soon Son LOL...

Nathaniel:

He is now 2 years 7 months and 1 day old. He has completely embraced the Naughty Head role of a Two year old going into a Three year old. Even though he is getting in trouble more than I like he still remains the best hugger in the house. I have enjoyed my time in this in between with him. Not a baby but not a big guy. Well he's huge but you know what I mean. He is really getting a grasp on his balance and quickly following after Johnpaul. He recognizes his colors animal shapes and getting some letters and numbers now. His vocabulary is amazing now. He's becoming more clear every day. I know he understands most of what I say..... now if I can just get him to listen we'd be in business! I measured him the other day and he is a whopping 40 1/2" Tall!!! Big Guy!

Christian:
He is 9 months ans 12 days old. He is changing daily. This update boggles my mind! He's climbing stairs, took a couple of steps, self feeding, using a cup, watches a show (Mickey's Play House), waves, said Mama & on Father's day Dada, rolls and bounces a ball, is helping with dressing well now and the best part is becoming more independent and playing!! It's getting hard to hold him because he does a dive out of your arms trying to get down to the floor! He opened the refrigerator the other day!!! Still trying to figure out how he did that! Crazy baby! I measured him the other day and he was 29.5" tall! He's growing so fat it is difficult to believe that in just a couple of months we will be celebrating his First Birthday!!!

What's cookin' Momday!


Pizza Time!!

I got a new Pizza Stone for my Birthday and have been itchin for a reason to try it!
Crust: 12-16 inch pizza Here is the Recipe I use :o)
Prep time:15 Cooking Time: 20 Ready In: 35!!!

Ingredients:

• 1 cup warm water (110 degrees F/45 degrees C )

• 1 tablespoon white sugar

• 2 1/4 teaspoons active dry yeast

• 3 tablespoons olive oil

• 1 teaspoon salt

• 2 1/2 cups all-purpose flour

How to’s:

1. Stir water, sugar and yeast together until dissolved. Add the olive oil and the salt. Stir in the flour until well blended. Let dough rest for 10-15 minutes.

2. Pat dough into pan or on to a pizza stone using fingers dipped in olive oil. If desired sprinkle basil, thyme or other seasonings on crust. Top with your favorite pizza toppings and bake for 15 to 20 minutes in a preheated 425 degree oven.

DELICIOUS!!!!

What is a Father?

****This post is revisited due to too early of posting ****


If the question were what is a Mother that would be an easy one. I had one a great one. I am one, hopefully a good one.

But this is not the question at hand. Growing up that was a good question, one I didn’t have the answer to. Don’t get me wrong, I had one. I knew him but he wasn’t a good one. I guess as a child I didn’t know any better. But when we left or more like fled.

I don’t think he wanted to be a Father. You don’t act and do things that he did if that weren’t true.

He did however collectively with my Mother do three very great things… Andy, Christa and Julie. I will give him that.
I did have Father figures in my life growing up though.

My Grandfather was always there. Showing me love and encouragement. He was responsible for the cultivation of my love for art. I thank him, Love him and most of all Miss him. Paul Grady Sanders was a mans man. Old fashion strong and the center of his world was his Wife and children.


But it wasn’t till I was 18 that I met my Father. Michael Edward Ferguson, the man that I call Daddy O’.
I love him respect him and have been honored by our ever growing relationship. It wasn’t always this way. In the beginning we.. didn’t get along so well. I was horribly protective of my mother and wasn’t going to let just anyone around. Like it was my choice ha ha ha. But as the years passed I let my guard down. I can’t tell you the exact moment he became my Dad, but I can tell you it was around the time of the passing of his cousin Stevie. It was then that I saw him. Why then I have not the foggiest idea. But after that I found myself drawn to him.

Now I can tell you when people see us they think he is my biological Father. Do I correct them? No.

Blood isn’t everything. It’s not even really something. When it comes to Love and Family it’s about what you invest. This man who hadn’t ever had his own children became a Father then became a Grandfather through it. He has fully embraced this role. He adopted us and I did the same right back. He is amazing and I love that he lets me love him. I love that he loves my Husband and his Grand boys the way he does. And to me most importantly the way he loves my Mom. The way I always wanted and dreamt about.

These two examples set me up for my final example. My sweet dear loving Husband.

Watching him become a Father has made my heart sing. Watching a man who before was just that become a Husband then a Father. That pride in his eye and over filling love in his heart. The way he plays with them, is there when they get hurt or in trouble. Watching him walk with a sleeping baby. That is true strength. From the moment he laid hands on his children it was perfect for him. This is what he was born for. This man was meant to be a Father.

I have fallen in love with him over and over though it.

He, like my Grandfather and Father cut from the same cloth.

They say you Marry a man that most resembles your Father… I can proudly say I did.

So to answer the question… What is a Father?

A man who with all of his heart and soul wants love nurtures another as his own.

In short: The Man who truly wants’ to be.

TGIF!!! Father's Day Plans anyone??

Any Big Father's Day Plans????? Looks like it is threatening to be a decent weekend here in Seattle!
I have big plan for Fathers day :o)
I am making a big dinner for my Dad and Husband. Check out the menu! I was inspired by Ruth's Chris my Husband's very favorite restaurant.

How many times did I write the word Blog??

I've been bloggin now with The reason for my Insanity for about... hummmm 8 months now.
One thing I love about Bloggin is all the different Blogs out there. Lets see how many times I can write Blog. Oh just did it again.
Before I started writing this one I tried my hand at another. I went down in flames, lets be honest it sucked. I couldn't keep writing on it, it wasn't interesting... It was titled Just Julie.... Okay I personally am not interesting enough to keep anything going.
But then my three super cute and crazy inspirations came along and BAM! A never ending stream of writing material. Then I stumble across this. I read all the blogs I follow and I look out for new ones all the time! I love hearing or I should write reading that I am not the only crazy frazzled Mom out there and I am trying to help out other blogs (did it again) get their word out too.
Now if you have read my Blog :o) before you know I tend to ramble but will make it back to my point eventually... So here I am back. I stumbled upon a Rather Cool Blog! It's called Blog About Blogs Love it! So Along side of coming back and listing your Blog here on Thursdays for Follow that Blog!! check out this Blog About Blogs too!! This little man is my baby in training. He gave me the greatest honor of changing my life and title forever. He made me Mom. He made me important.

It has been a short four years that have blurred past of sword fights, super heroes and laughs.

Johnpaul is a Big Brother ask any one he doesn't take his title lightly.

One of my most favorite of many amazing attributes of Johnpaul is his idea of Honor Love and Family. He is a awesome little boy. I look forward in watching him grow.

This guy was worry from within the whom. At week 15 I started to bleed. We were loosing him. It was that day this sweet one even before breathing air taught me one of my most precious life lessons.. patience.

Before I had little but while pregnant with him I was on strict bed rest for 172 days. I was more than worth it.

My image of him was he was the most Determined person.. boy was I right. He will because of this be anything he wants. Greatness is in his future.

Nathaniel is loving, sweet and considerate. He can melt your worst day with his smile.

This little love. He's my last but in no where my least. He was not planned but was very welcome. He was an Anniversary Gift the best kind ever. Christian doesn't talk yet or walk but I can already tell he's a big thinker.

He is always watching. I can't wait to see how his personality unfolds... but at the same time hope he takes his sweet time. He is my baby, my last and I'd like to keep him sdmall for a bit ;o)
